In the evening — the first dinner: we start diving into northern cuisine, try local dishes, share first impressions, and feel that the adventure has already begun.
Txakoli, first pintxos and views of France
We have breakfast and head to a Txakoli winery — tasting a wine made from grapes that grow only on this ocean coastline.
Then we walk through the town of Hondarribia: colorful facades, old town streets, and the first pintxos of the trip.
After lunch we cross the border into France and climb the sacred Basque mountain La Rhune — the panoramic views of the ocean and the Pyrenees from the top are simply breathtaking.
In the evening — dinner and sharing impressions.
Basque cheese and salt
Today we head to the homeland of Basque sheep's milk cheese: we see how it's made by hand and taste different varieties straight from the farm.
After lunch — the Añana salt valley (Álava). This place is known worldwide: its salt goes to the finest restaurants and becomes part of high-end gastro menus. We walk through ancient salt terraces, learn how it's harvested, and try a foot spa experience. If the season allows, we'll do a salt tasting.
In the evening — dinner at a restaurant.
Basque cuisine with your own hands
We head to a cooking class. Together with the chef we go to the market — picking ingredients the way locals do.
Then we cook Basque dishes under his guidance at a culinary school National Geographic ranked in the world's top 10. It's all about the experience: we chop, fry, taste, and learn from the best.
In the afternoon we explore San Sebastián: the old town, the waterfront, the atmosphere.
In the evening — dinner near the house and conversations about a day you won't forget anytime soon.
Rioja and cider
After breakfast — Rioja. First stop — the winery: we ride through the vineyards in a vintage car, descend into underground caves, and taste wines right where they're born. Lunch — Riojan cuisine with local wine.
Then we drive on and discover Basque heritage in Loyola: the basilica that became the birthplace of an entire order.
In the evening — a sidrería. We learn everything about the place, cider straight from the barrel, and a proper Basque dinner: txuleton, cod, omelette.
And to finish — a stop in San Sebastián for the famous Basque cheesecake from the man who invented it.
Farewell to the North
Breakfast, packing up, and sharing final impressions.
