La Cuchara de San TelmoOld. Respected. One of the most acclaimed pintxos bars in the city. No fuss — just really good food. Around €15-25.
Bar NestorSame level and price range as San Telmo. Locals know it. Tourists discover it and come back. Both bars are on Calle 31 de Agosto — one of the oldest streets in San Sebastián. Worth a walk on its own.
Itsaspe DonostiaIf you want history — here it is. They say this is where pintxos as we know them were invented. The first pintxo on a skewer. The guild. The beginning of everything. The ground zero of Basque food culture. Worth stepping in for that alone.
Antonio TabernaA personal bonus from me. Just go. The food is outstanding. Around €15-25 — worth every cent.

How locals do itMinimum 3 pintxos bars in one evening. Don't fill up at one place — this isn't a restaurant, it's a route. Have some pintxos, have a drink, move on. That's the real San Sebastián.Best time — 10:00 to 14:30 and 19:00 to 21:00. They're open at other times too, but as a local guide, this is my personal advice — the atmosphere is different during these hours.Always check that the bar is open before you go — each one has its own schedule.
